Chocolate Cake Balls
Celebrating Valentine’s Day this year with these chocolate cake balls! They are super moist and super easy to make!
What you’ll need:
– Chocolate cake, hot out of the oven
– 1 Tablespoon butter
– 1 Tablespoon water
– 3/4 cup powdered sugar
– 6 oz valentine colored jimmies
What you’ll do:
– As soon as you pull your cake from the oven, crumble it up and add to the bowl of a stand mixer. Mix on medium speed for a few minutes so that the cake begins to clump together.
– Use a small cookie scoop (mine is 1 1/2 Tablespoons) to scoop the cake onto a lined baking sheet. You should get about 2 dozen. Using clean hands, roll the scooped cake into a ball shape.
– Make the icing by adding the butter and water to a small microwave safe dish and microwave for 20-30 seconds. Whisk in the powdered sugar.
– Pour sprinkles into a small dish or plate.
– Using clean hands, coat your cake balls in icing by adding about 1/4-1/2 teaspoon of the icing in the palm of your hand. Then take a cake ball and roll it between both palms so that it has a thin layer of the icing coating it. Quickly dip in sprinkles and place back on your baking sheet. Repeat this process until all of your cake balls are coated.

A few notes:
– To make things easy, I just used a box cake mix but feel free to use any preferred recipe.
– While coating your cake balls in icing and then dipping in sprinkles, try to keep your fingertips free of icing so that the sprinkles don’t end up sticking to you.
– I found that the sprinkles were less likely to fall off the cake balls the longer I let them sit untouched. So try to hold off transferring them to another dish for as long as possible.
– You can make these a few days prior to when you’d like to serve them as they stay surprisingly moist for several days.
