Pumpkin Spice Streusel Loaf

If there was a “I’m not a regular mom, I’m a cool mom” version of pumpkin bread then it’s definitely this! I was pretty tired of your typical loaf with cream cheese icing and wanted to find a way to spice things up. (Pun fully intended!) I did so by adding a couple cinnamon layers to the center and topped her off with streusel topping!

What you’ll need for the cinnamon swirl:
– 3 Tablespoons brown sugar
– 1 teaspoon cinnamon
– 1 teaspoon pumpkin pie seasoning

What you’ll need for the streusel topping:
– 1/2 cup flour
– 1/4 cup brown sugar
– 1/2 teaspoon pumpkin pie spice
– 1/4 cup butter, room temperature

What you’ll need for the loaf:
– 1/2 cup butter, room temperature
– 1 cup sugar
– 2 eggs
– 1 Tablespoon vanilla
– 1 cup pumpkin puree
– 2 cups flour
– 1 Tablespoon baking powder
– 1/2 teaspoon salt

What you’ll do:
– Mix together the ingredients for the cinnamon swirl in a small bowl and set aside.
– Mix together the dry ingredients for the streusel topping in bowl and cut in the butter using your fingers, a dough cutter, or two knives until crumbly. Set aside.
– Preheat your oven to 350F and line a metal loaf pan with parchment and spray down any exposed sides.
– Cream together your butter and sugar for 1 minute. Scrape down the sides of the bowl and beat in the pumpkin for another minute.
– Beat in your eggs, one at a time along with the vanilla.
– Add in the flour, baking powder, and salt until just combined.
– Transfer 1/3 of your batter to the prepared dish, using your spatula to spread the batter to each corner and smooth down the top. Evenly sprinkle 1/2 of the cinnamon swirl mixture of the batter. Top with another 1/3 of the batter and cover with the second half of the cinnamon swirl mixture. Add the third of the batter and top with the streusel topping.
– Bake for 1 hour and 15 minutes or until a toothpick comes out clean when poked in the center.
– After about 10 minutes, transfer the loaf onto a cooling wrack. Allow to cool as long as you can stand and ENJOY!
