Cheddar Jalapeno Biscuits

These cheddar jalapeno biscuits are perfect if you’re looking to spice up your breakfast!

What you’ll need:
– 1 cup milk
– 1 Tablespoon lemon juice
– 2 1/2 cups flour, plus extra for rolling
– 1 Tablespoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon pepper
– 1/4 teaspoon onion powder
– 1/4 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/2 cup butter, cold
– 1 1/2 cup grated sharp cheddar
– 1 jalapeno, seeded and finely diced

What you’ll do:
– Add the lemon juice to your milk and place in the refrigerator for later (you can also substitute for buttermilk).
– Whisk the flour, baking powder, baking soda, pepper, onion, garlic, and salt together in a large bowl.
– Dice your cold butter into small pieces and toss in the flour. Using a dough blender, two knives, or just your hands, cut the butter into the dry mixture so that it is coarse and crumbly.
– Add in the cheese and jalapeno and toss with a fork.
– Pour about 1/2 of your milk into to the flour mixture and use a fork to gently toss the dry into wet. Once most of the liquid has been absorbed, pour small amounts of liquid onto dry parts and us the fork to toss. Continue to do this until you’ve used up all the liquid.
– Lightly flour a clean surface. Place your dough atop the flour and dust the top with more flour. Use your hands to shape the dough into a rectangle (this by no means needs to be perfect) and fold the dough in half. Gently pat that back down into a rectangle and fold in half again. Repeat this process one more time, adding flour as needed.
– Use a rolling pin to roll the thrice folded dough into a square that is roughly 9×9 inches, keeping the edges as sharp as possible. Use a knife to cut the squares in ninths and place on a lined baking tray, leaving about an inch between each biscuit.
– Place your biscuits in the freezer while you preheat your oven to 400F.
– Bake your biscuits for 15 minutes or until golden brown.
