Peach Galette

I went a little overboard when buying peaches at the store recently, thinking it would take ages for them to ripen. Naturally they ripened immediately and needed to be used. I was pressed for time so turning them into a galette seemed like a pretty quick way to whip up something yummy!

  • Line a large baking sheet with parchment.
  • Lightly flour a clean surface and roll out your dough into a circle that is about 1/8 of an inch. Dust off any excess flour and transfer to your lined baking sheet. Chill in the fridge for 10 minutes to prevent the dough from softening too much.
  • While your dough is chilling, thinly slice your peaches. Try to keep them as equal in size as possible so that they bake evenly.
  • Pull your rolled out dough out of the fridge and quickly begin to arrange your peaches in the center. To create a rose pattern, begin by creating a boarder about 1 – 2 inches from the edges of the dough, overlapping each slice by about 1/3. Continue to do this around and around until you reach the center, adjusting the slices and adding more as needed.
  • Gently fold the edges up and around the peaches so that it mostly covers the first row.
  • Place your galette back in the fridge while you preheat your oven to 450F.
  • Sprinkle the sugar on top of the galette and bake for 20-25 minutes or until the crust turns a golden brown and the peaches become tender.
