Cherry Pie Bars

These bars have got a sugar cookie top and bottom with cherry preserves in between, making a tasty treat for any occasion. They are super quick and simple to throw together if you haven’t the time (or energy) to make a full pie!

The Crust
The crust is made with a simple sugar cookie dough that calls for you to reserve some to then sprinkle on later for the topping!

The Filling
I used a store bought preserve for this recipe, but you can really use whatever you’ve got on hand. If you like the texture of fruit, then you could stir some chopped up cherries into your filling as well.

What you’ll need:
– 1 stick butter, room temperature
– 3/4 cup white sugar (150g)
– 1/4 cup brown sugar (50 grams)
– 1 egg
– 1 teaspoon vanilla
– 1/2 teaspoon salt
– 2 cups flour (240g)
– 1 cup cherry preserves

What you’ll do:
– Preheat your oven to 350F and line a square baking dish with parchment.
– Cream together your butter and sugars until fully combined.
– Add in your vanilla, egg, and salt and mix until smooth.
– Add in half the flour, mix until just combined. Then add in the remaining flour and mix until just combined.
– Press 3/4 of the dough mixture into the bottom of your lined baking dish so that it is in an even layer.
– Spread your cherry filling overtop so that it is in an even layer as well.
– Using the reserved dough mixture, pinch off small bits with your fingers and haphazardly sprinkle atop the filling. Try to leave some filling visible so that it gives it a nice look after baking.
– Bake for 30 – 45 minutes, or until the topping is golden brown.
– Allow to come to room temperature before cutting into 16 squares.
