Birthday Cake Popcorn
Birthday cake muddie buddies are a serious guilty pleasure for Mario and me, but one day I didn’t have chex cereal so I substituted with popcorn. Obviously it was amazing. This is such a simple recipe to throw together when you need a treat and all the ingredients are shelf stable so you can just keep it all on hand!
Popcorn
I pop my own popcorn on the stove for this but you can buy plain microwavable popcorn at the store to make things easier.
White Chocolate
White chocolate isn’t my fave, so I don’t use a ton in this recipe. But if you really like the taste of white chocolate then you could definitely add an extra quarter cup!
Cake Mix
For the funfetti cake mix, I use this one but any other brand will work!
What you’ll need:
– 4 cups popped popcorn (1/3 cup kernels, popped according to directions)
– 1/2 cup white chocolate chips, melted
– 1/2 cup funfetti cake mix
– Rainbow sprinkled, as needed
What you’ll do:
– Spread your popped popcorn on a large baking sheet.
– Drizzle your chocolate over the popcorn, using a rubber spatula to stir it around and get everything coated.
– Evenly sprinkle your cake mix over the chocolate covered popcorn, using your spatula to stir it around and get everything coated.
– Top with rainbow sprinkled if desired and ENJOY!
