Chocolate Banana Protein Muffins
I love getting in protein any way I can and these muffins are the perfect boost! Between the protein powder, milk, oats, eggs, and bananas, each muffin has a little over 5 grams each (I typically eat 2 at a time)! These are super quick to make and perfect for a breakfast meal prep or midday snack!
What you’ll need:
– 2 cups oats, divided
– 2 ripe bananas
– 2 eggs
– 1 cup milk
– 1 scoop chocolate protein powder
– 1/2 teaspoon salt
– 1 Tablespoon baking powder
– 1 Tablespoon cocoa powder
– Optional chocolate chips for topping
What you’ll do:
– Preheat your oven to 350F and prepare a muffin tin for 14 muffins. (If you are like me and only have a 1 12 cup tin, I portioned my other 2 muffins into ramekins.)
– In a food processor, pulse 1 cup of the oats until mostly broken down. Add to a medium sized bowl with the remaining 1 cup of oats.
– Into the same processor (no need to clean it) add the remaining ingredients and blend until fully combined.
– Pour your wet mixture into the bowl with the oats and stir until combined.
– Evenly divide between 14 muffins and top with chocolate chips if desired.
– Bake for 20 minutes and ENJOY!
A few notes:
– This is the protein powder I used but feel free to use whatever you have on hand! This one does have 30g protein per scoop so keep that in mind when choosing a protein to use for this recipe.
– I don’t typically like the taste of protein powder but I definitely could not taste it in this recipe.
– I used Fairlife milk for this recipe so it does have a bit of a higher protein content that regular milk.
