Banana Pancakes

I’m always looking for a way to make something a bit healthier and these banana pancakes are definitely a great traditional pancake alternative!

I remember when banana pancakes became all the rage a few years ago. Truth be told I did not really like my first experience! But I saw the potential, and after a few tries I got it down to a pretty tasty and easy meal option. It’s also a great way to use up that forgotten banana on your counter (we’ve all been there lol)!

I used to painstakingly mash my banana with a fork but I’ve learned to just throw everything into the blender for a much quicker clean up. You can also mix things up with different add ins. From spices to nuts to berries, your options are pretty much unlimited!

What you’ll need:
– 1 medium banana
– 2 eggs
– 1/4 cup oatmeal
– 1/2 teaspoon vanilla
– 1/2 teaspoon cinnamon
– 1/2 teaspoon baking powder
– Pinch of salt

What you’ll do:
– Add everything to a blender and blend until smooth
– Heat a pan on medium heat and grease with butter/pan spray/oil/etc
– Divide batter into 2 large pancakes. This wont bubble up on top the way a regular pancake would so keep an eye on it and flip once the bottom reaches a golden brown color. Cook the second side until that also reaches a golden brown color. For smaller pancakes like the ones in the picture, I used 1/4 cup batter for each pancake.
– Top with all the things and ENJOY!

These pancakes are topped with chopped pecans, frozen blueberries, and some huckleberry preserves. But feel free to top them with anything you’d like!
