Cinnamon Toast Crunch Bars

Cinnamon Toast Crunch is pretty high on my list of cereal faves. I mean, can you really blame me? I was always I cinnamon sugar toast kind of person, so the cereal adaption was really a no brainer. That’s why when I saw someone make Rice Krispie Treats out of Cinnamon Toast Crunch, I knew I had to make my own version!

Homemade Rice Krispie Treats really weren’t something that I was into, the store bought ones were just way tastier. But when I saw the Cinnamon Toast Crunch version I felt pretty compelled to get my hands on one! I figured that at the end of the day they wouldn’t taste bad, but WOW was I pleasantly surprised by just how good they turned out!

What you’ll need:
– 6 Tablespoons butter
– 1 10oz bag of marshmallows
– 1 teaspoon vanilla
– 1/2 teaspoon salt
– 6 cups Cinnamon Toast Crunch
– 1/4 cup white chocolate chips
– 1 teaspoon coconut oil

What you’ll do:
– Line a square baking dish with parchment or spray generously with cooking spray.
– Brown your butter by first melting it over medium high heat. Continue to cook the butter and stir with a rubber spatula. You’ll know it’s working when it starts foaming up. The butter will eventually turn brown and have a nutty aroma.
– Turn the heat down to medium low and add the marshmallows, vanilla, and salt to the pan. Stir until the marshmallows are fully melted.
– Fold in the cereal until completely covered in the marshmallow mixture.
– Pour into your prepared pan. Using your hands, gently press the mixture into the corners until even. (A little cooking spray on your hands helps with this!) Pop in the fridge for at least an hour to firm up.
– While that’s in the fridge, add your chocolate and coconut oil to a bowl and microwave for 30 seconds and stir. If it’s not fully melted (it likely won’t be) then put it back into the microwave for 10 seconds and stir. Repeat this process until fully melted.
– Before or after cutting into squares, drizzle your chocolate over the cereal bars and ENJOY!

A few notes:
– While I recommend taking the extra couple minutes to brown your butter, it’s not 100% necessary. Just make sure to scale back your butter to 4 Tablespoons instead of 6.
– When you add your cereal to the melted marshmallows, be sure to move quickly so that it doesn’t start to set. You can even pre-measure into another dish to easily dump all at once if you think it will make things easier for you!
