Cauliflower Protein Oatmeal

When I was in high school, if I wasn’t eating Honey Bunches of Oats for breakfast, then it was definitely a bowl of Quaker’s instant maple and brown sugar oatmeal. That stuff was fantastic! But unfortunately, it wasn’t exactly the healthiest option (but try telling 17 year old me that!).

Jump forward almost 10 years and I still love a good bowl of oatmeal! But after 2 rounds of Whole30, it’s still pretty heavily drilled in my head that my meals need to have a good bit of protein and veggies worked in (not the worst mind set to have!). That’s where my cauliflower protein oatmeal was born!

Now hear me out, I get that cauliflower in oatmeal sounds insane. But it totally works! I use riced cauliflower and you practically can’t even tell it’s there. My picky eater even likes it! And as for the protein powder, it’s VERY rare that I like a protein powder enough to drink it as a shake. There’s just this consistent after taste in protein shakes that rubs me the wrong way. But that weird taste is completely gone when I add it to my oatmeal!

What you’ll need:
1/2 cup oatmeal
1/2 cup riced cauliflower
1/2 scoop protein powder
1 cup water

What you’ll do:
– Add everything to a small pot and begin to cook over medium/high heat.
– Using a rubber spatula, stir your oatmeal until all the water has absorbed and it starts to bubble.
-Transfer your cooked oatmeal to a bowl and ENJOY!

A few notes:
– I switch back and forth between old fashion and instant oats. You really can’t go wrong, it just comes down to the texture you prefer of the cooked oats.
– I use store bought frozen cauliflower rice for this recipe.
– I’ve been using the Body Fortress Whey Protein, but you can use whatever you’ve got! The strawberry flavor wasn’t my fave, but the chocolate and vanilla were great!
– If you want a bit more protein, you can up the amount of powder you add. Just keep in mind that you may need to add in a bit more liquid to compensate. (I would say about a 1/4 cup for an additional half scoop.)

Strawberries, bananas, pecans, and hemp hearts.
Frozen berries, yogurt, and crunchy peanut butter.
Blueberry puree, blueberries, and crunchy peanut butter.
Fresh peaches, yogurt, and granola.
